Preheat oven to 180 C.In a large bowl, mix together the pork mince, onion, walnuts, breadcrumbs, lemon zest, apple, egg yolk, salt and pepper and parsley.Wash your hands and use them to incorporate all the ingredients. Lay out the bacon strips on a baking tray and using your hands, form golf-size balls of the mince mixture. Place one on a bacon strip and wrap it around the mince. Repeat this process until you have finished all the mixture. Bake for 20 - 25 minutes or until cooked through. Tip: Pork should always result in a pale pink colour and not "grey" when cooked.
