Ingredients (12)

125 ml milk
125 ml vegetable oil
125 ml castor sugar
3 eggs
1/2 tsp vanilla — essence
375 ml flour — cake
2 tsp Baking powder
1 salt
125 g blueberries — fresh
TO SERVE:
100 g blueberries
1 cup crème fraîche — or Greek yoghurt
Goldcrest Pure Honey — for drizzling

Method:

Beat the milk, oil, sugar, eggs and vanilla essence together until sugar has dissolved.
Sift the flour, baking powder and salt together into a large bowl. Mix in the blueberries. Make a well in the centre and add the milk mixture. Mix until well combined and smooth. Allow to stand for at least 15 minutes before frying.
Heat a heavy based frying pan to a moderate temperature and wipe with an oiled paper towel to lightly grease.
Drop heaped tablespoonfuls of batter into the pan (making sure there are at least 3 berries in each). When bubbles rise to the surface, turn them over and cook the other sides until golden.
Serve hot or room temperature with creme fraiche or Greek yoghurt, a drizzle of honey and extra berries OR hot with butter, cinnamon and sugar.
TIP: Replace vanilla essence with zest of 1 lemon to add a refreshing zing to the batter.
