    honey
  • 4
    tsp
    Dijon mustard
  • 4
    tsp
    olive oil
  • 1/2
    cup
    low-GI breadcrumbs
  • 1/4
    cup
    sesame seeds
  • 250
    g
    skinless chicken breast
  • olive oil spray
 

Method

Preheat the oven to 180°C. Mix the honey, mustard and olive oil.

In a separate bowl, mix the breadcrumbs and sesame seeds. Cut the chicken breast into strips about 2 cm thick.

To coat, first dip the chicken strips into the honey-mustard mixture and then into the breadcrumb mixture; coat well.

Spray the crumbed strips with olive oil spray and place the strips on a baking tray lined with baking paper. Bake for 15 minutes.

Enjoy with a fresh salad or grilled vegetables.
