Pineapple chicken stir fry

Ingredients

    ml
    sunflower oil
  • 2
    cloves garlic - chopped
  • 6
    chicken-breast fillets - cut into cubes
  • 1
    onion - chopped
  • 200
    g
    fresh pineapple, peeled and cubed
  • 60
    ml
    light soya sauce
  • 5
    ml
    sugar
  • 15
    ml
    freshly grated ginger
 

Method

Heat the sunflower oil in a large, heavy-based frying pan or wok before adding the garlic and frying for 30 seconds.

Then add the chicken and stir fry over a high heat for one minute.

Add all the remaining ingredients along with 60ml water.

Stir-fry for three to four minutes until everything is cooked through.

Season with salt and freshly ground black pepper, and serve hot with rice.
