Preheat the oven to 200°C.Arrange the chicken pieces in an oven safe baking dish. Rub with olive oil and season generously with salt and black pepper. Turn down the temperature to 180 °C and roast in the oven until crispy – for about 40 minutes.Meanwhile, in a saucepan heat the butter and saute the onion and garlic until translucent. Add the mushrooms and fry until dry. Deglaze the pan with the wine, add the cream and parsley and leave to reduce until desired thickness.For the cauliflower mash – steam the cauliflower florets of one head until soft.
