Cheese and parsley muffins

    large eggs
  • 400
    ml
    milk
  • 280
    g
    cake flour
  • 20
    ml
    baking powder
  • 4
    ml
    salt
  • 4
    ml
    cayenne pepper
  • 300
    g
    Cheddar cheese- grated
  • 200
    ml
    coarsely chopped parsley
 

Method

Beat the eggs lightly, then add sufficient milk to measure 500 ml.

Sift the dry ingredients together, add the cheese and parsley and add the liquid, folding in lightly. Do not overmix.

Grease a muffin tin and pour in the muffin mixture, filling each hollow two-thirds of the way up.

Bake in a preheated 200°C oven for 15 minutes until golden brown.
