Calamari with savoury rice

Ingredients

    ml
    long grain rice
  • 1
    clove of garlic, crushed
  • 2
    carrots, peeled and finely diced
  • 3
    spring onions, thinly sliced
  • 500
    g
    calamari tubes, cut into rings
  • 20
    ml
    seafood seasoning
  • 30
    ml
    butter
  • 20
    ml
    chopped fresh parsley and dill
  • lemon slices, to serve

Put the rice into a large saucepan together with 5ml salt and 625ml cold water. Cover and bring to the boil. Reduce heat and simmer for 10 minutes.

Add the garlic, carrots and spring onions and simmer for five minutes or until the rice is cooked.

Combine the calamari and seafood seasoning. Melt the butter in a saucepan. Fry the calamari for two to four minutes, or until just cooked. Don’t overcook the calamari as it will become tough.

Stir the parsley and dill into the savoury rice and serve with the calamari.
