Beetroot and feta fritters

beetroot feta fritters

Ingredients

  • 500
    ml
    self-raising flour
  • pinch of salt
  • 1
    egg
  • 30
    ml
    butter - melted
  • 200
    ml
    milk
  • 250
    ml
    grated raw beetroot
  • 250
    g
    feta cheese - crumbled
  • 30
    ml
    chopped parsley or chives
  • Salt and freshly ground black pepper
  • oil for frying
 

Method

Sift flour and salt into a bowl. Make a well in the centre and add the egg, butter and milk.

Stir to combine.

Add beetroot, feta, herbs and seasoning.

Heat oil in a large pan and fry spoonfuls of batter for 3 minutes on each side, or until light golden.

Drain on kitchen paper.

Serve with a light salad or oven-roasted vegetables.
