Basic curried mince

Ingredients

  • oil
  • 2
    onions, sliced into rings
  • 15

    curry powder
  • 2
    ml
    ground cumin (jeera)
  • 2
    ml
    ground ginger
  • 2
    ml
    ground coriander
  • 1
    whole cinnamon stick
  • 500
    g
    mince
  • salt and freshly ground black pepper
  • 10
    ml
    apricot jam (and/or 65 ml (1/4 c) chutney)
  • 15
    ml
    tomato paste
  • 2
    tomatoes, skinned and finely chopped
  • 5
    ml
    turmeric
 

Method

Heat a little oil in a pan and fry the onions until soft and glossy.
Add the spices and stir-fry for another minute.
Add the mince and fry until the meat is done.
Stir with a fork to break up the larger lumps.
Season to taste with salt and pepper and add the remaining ingredients.
Reduce the heat, cover and simmer slowly until all the flavours are well blended. 
Serves 4.
