Asian chicken salad

    baby spinach
  • 1
    handful
    coriander
  • 20

    mint leaves
  • 150

    grilled chicken breasts (sliced)
  • 1/2
    avocado (diced)
  • 50
    g
    sugar snaps
  • 3
    spring onions (sliced)
  • 1
    Tbs
    sesame seeds (black or white)
  • DRESSING:
  • 60
    ml
    rice vinegar
  • 20
    ml
    sugar
  • 20
    ml
    sweet Indonesian soy sauce
  • 120
    ml
    canola oil
  • 1
    cloves
    garlic (finely chopped)
  • 1
    chilli (deseeded and finely chopped)
  • 1
    inch ginger (peeled and finely chopped)
 

Method

 
Place all the dressing ingredients in a jar and shake to emulsify, it will separate if you leave it to stand, but you can simply shake it again before serving.

Layer the spinach, coriander and mint on a plate and scatter the remaining ingredients over the leaves.
Finish with generous spoonfuls of dressing.
