Caramel mageu

Mageu or mahewu is nonalcoholic fermented mielie pap drink. We added storebought mageu to quicken the fermenting process.

Ingredients (8)

5 l water
750 ml maize meal
125 ml flour
500 ml store-bought mageu
250 ml castor sugar
40 g butter
125 ml cream
bananas — sliced

Method:

1 In a large pot, bring the water
to a boil. In a bowl, mix the maize
meal with 160 ml (2
/3 cup) water
and mix until a thick paste forms.

2 Pour the maize meal mixture into
the boiling water, while whisking.
Cover and simmer over low heat
until smooth and thick, about
15 minutes. Set aside to cool
completely.

3 Remove the hard top layer from
the porridge. Stir in the flour and
mageu. Cover and set aside for
8 hours.

4 CARAMEL

Sprinkle the sugar in
an even layer in a saucepan over
medium heat. Melt the sugar by
shaking the pan until it begins to
change colour on the sides. Add
the butter and swirl the pan around.
Remove from the heat and stir in the
cream using a whisk until smooth.
Add the bananas to the sauce and
set aside for 5 minutes.

5 Pour the caramel into the mageu
mixture and serve.
