Banana pudding

Method

Let this dessert cook while you enjoy your main meal.

Preheat the oven to 180°C. Grease a baking dish.

1 Put the flour, baking powder, sugar, minced fruit and salt in a bowl.

2 Mash one banana in a separate bowl, then add the butter, milk, eggs and rum, and whisk together. Pour the wet ingredients into the dry mixture, and mix well. Scrape into the prepared baking dish and smooth the surface.

3 Slice the remaining bananas length-ways and put them cut-side up on top of the pudding batter.

4 Bake for 1 hour until it sets. Serve with ice cream or custard.

TIP Mix 125 ml (½ cup) sugar with 80 ml boiling water and pour over the pudding before baking for a moister dessert.
