Sumptuous sweet potato pastry

    big sweet potatoes, peeled and cooked
  • 400
    g
    readymade puff pastry roll
  • 80
    ml
    brown sugar
  • 5
    ml
    cinnamon
  • extra sugar and cinnamon for sprinkling
  • 500
    ml
    cream
 

Method

30-35 minutes

1. Preheat the oven to 180 °C. Grease an ovenproof dish.

2. Mash the sweet potatoes until smooth and mix in the sugar and cinnamon.

3. Unroll the pastry and spoon the mashed sweet potatoes on top. Roll up like a Swiss roll.

4. Cut the pastry into slices and pack them in the prepared dish. Sprinkle more sugar and cinnamon on top and pour the cream over. Bake for 25-30 minutes or until the pastry is done.

5. Serve with ice cream or custard.
