Toasted bread parcels with brie cheese and sweet peppers

    slices white bread
  • 1
    red pepper, cored, seeded and diced
  • 120
    Brie cheese, cut into small pieces
  • salt and freshly ground black pepper


Preheat the oven grill. Halve each 2 cm thick slice of bread horizontally to form a pocket, but don't cut all the way through. Heat a little olive oil and fry the diced red pepper until tender. Fill each slice of bread with red peppers and cheese and season with salt and pepper. Grill until golden brown and the cheese begins to melt. Serve immediately.
