Stuffed eggs with coriander and chives

  • 6
    hard-boiled eggs
  • 125
    good mayonnaise
  • chopped coriander
  • 200
    shrimps, cooked and chopped
  • salt and milled pepper to taste
  • sliced red onion and chives to garnish


Halve eggs lengthways. Place yolks in a bowl with mayonnaise, coriander and shrimps. Season and mix well. Spoon mixture into halved eggs. Garnish with onion rings and chives. Serve as a cocktail snack or as a light lunch with a salad.
