Spaghetti al cartoccio (Spaghetti in a parcel)

    large prawns

    chilli, chopped
  • 1 can (410 g) Italian tomatoes
  • 100
    white wine

  • a few sprigs fennel
  • a few fresh basil leaves
  • salt and freshly ground black pepper


Preheat the oven to 180 °C. Shape heavy duty aluminium foil into a container large enough to hold all the pasta and other ingredients, allowing extra foil for sealing the parcel. Heat the olive oil in a saucepan over medium heat and sauté the garlic until it?s soft and begins to change colour. Add the parsley, raw prawns and chilli and fry for 2 minutes. Add the tomatoes and wine and cook for another 5 minutes. Cook the pasta for half the time indicated on the packet instructions and drain well. Add the pasta, fennel, basil, salt and pepper to the tomato and prawn mixture. Spoon everything into the foil container and wrap tightly to seal. Put the parcel in the oven and bake for 10 minutes. Open the foil parcel at the table so your guests can savour the delicious aromas.
