Royal icing

  • 2
    large egg whites
  • 750
    icing sugar
  • 5
    lemon juice


1. Beat the egg whites until foamy. Beat in icing sugar, a little at a time, beating well after each addition. 2. Beat until it forms soft peaks when the beater is lifted. Add lemon juice and beat until stiff. If the icing is too stiff, add a little water, or add more icing sugar to thin icing.
