Roast mushroom pasta

  • 400
    black mushrooms, torn into pieces
  • 3
    cloves granulated garlic, finely chopped
  • 2

    white balsamic vinegar
  • 1
    glug PnP Finest extra-virgin olive oil
  • 1
    knob PnP butter
  • 250
    PnP tagliatelle
  • 60
    grated parmesan cheese, plus extra for serving
  • 1
    dash salt and ground pepper


Preheat oven to 190ºC.

Toss the first 6 ingredients in a roasting pan and roast for 15 minutes.

Cook pasta according to packet instructions. Drain, reserving ¼ cup cooking liquid.

Toss pasta and cooking liquid with mushrooms, pan juices and parmesan.

Serve immediately, scattered with extra parmesan.

More good ideas:

Add a handful of toasted pine nuts.

Replace balsamic vinegar with a tablespoonful of lemon juice and grated lemon peel.
