Pork schnitzel with banana

    slices leg of pork, 3-5 mm thick
  • prepared mustard
  • 6
    slices ham
  • 6
    thin slices Cheddar cheese
  • 2
    bananas, thinly sliced
  • little lemon juice
  • 50
    cake flour
  • salt and freshly ground black pepper
  • 2
    eggs, beaten
  • 250
    fresh or dry bread crumbs
  • cooking oil for shallow frying


1. Place a slice of meat between two layers of plastic, flatten slightly with the palm of your hand and spread with mustard. Repeat with the remaining slices. 2. Arrange a slice of ham and cheese and a few slices of banana on six of the meat slices. Sprinkle with a little lemon juice and cover each slice with the remaining meat slices. Secure them with cocktail sticks. 3. Season the cake flour with salt and pepper. Roll the meat in the cake flour, then in egg and finally in the breadcrumbs. Chill for at least 30 minutes to ensure the breadcrumbs adhere to the meat. Fry in heated oil till golden brown and done. Drain on kitchen towelling and serve immediately with vegetables and a slice of lemon. Serves 6.
