Pasta with anchovies, basil and olive oil

    olive oil
  • 2
    cloves garlic, crushed
  • 75
    fresh white breadcrumbs
  • 1
    bunch fresh basil, chopped
  • 500
    spaghetti, ribbon noodles or other pasta of your choice
  • extra olive oil
  • milled pepper
  • 8


Heat olive oil and sauté garlic until glossy. Add breadcrumbs and stir-fry until golden. Remove from stove and stir in basil. Meanwhile, cook pasta according to packet instructions. Rinse and drain. Transfer pasta to heated bowls, toss in breadcrumb mixture and extra olive oil, if needed. Season with milled pepper. Top each bowl with 2 anchovies. Serve with a salad, crusty bread and lots of freshly grated Parmesan cheese.
