Orange and ginger cookies

    ginger preserve in syrup, finely chopped

    extra cake flour
  • 1
    orange, grated rind and juice
  • 100
    icing sugar, sifted

Prepare the basic mixture as described. Add the ginger pieces and mix well. Add the extra cake flour if the mixture is too slack. Add the grated orange rind and mix. Shape into balls and bake as described for the basic mixture and leave to cool completely before decorating. Add just enough orange juice to the icing sugar to make a spreadable paste and decorate the cookies with the mixture. Makes about 13 cookies.
