Lamb chops with a cherry and mint sauce

  • 12
    lamb chops
  • 1
    tin black cherries
  • 1
    small handful mint leaves
  • 1
    red wine
  • Seasoning

To make the sauce:
Take the tin of black cherries and place in a small pot with the red wine and a little salt and black pepper.
Reduce this for about 20 minutes or until reduced by half.
Add the freshly chopped mint just before serving.
The lamb chops:
Season the lamb chops with salt and pepper and pan-fry in butter until browned and medium rare.
To serve:
Either as a tapas in a little bowl or as a main with some creamy mash and greens.
