Green salad leaves with mustard dressing

    ml
    olive oil
  • 5
    ml
    mustard powder
  • 15
    ml
    white wine vinegar
  • salt
  • 15
    ml
    lemon juice
  • milled black pepper to taste
  • TOPPING
  • 1
    medium onion, peeled and finely diced
  • 30
    ml
    mild blue cheese, coarsely crumbled
  • 12
    spears green asparagus, fresh or canned (optional)
 

Method

 
DRESSING: Cream olive oil and mustard. Whisking constantly, add remaining ingredients. TOPPING: Sprinkle salad leaves with onion and cheese. Add asparagus, if using. Just before serving, spoon dressing over and toss salad.
