Crumbed garlic chicken

    chicken pieces

    crushed garlic cloves

    coarse salt

    olive oil
  • finely ground black pepper
  • 30
    chopped fresh parsley

    fresh breadcrumbs

    finely grated Parmesan cheese

    eggs, beaten

Arrange the chicken pieces in a single layer in a dish. Crush the salt and garlic into a paste. Add the oil and season with black pepper. Smear over the chicken, cover with cling wrap and allow to stand for a few hours. Mix parsley, crumbs and cheese together. Preheat the oven to 180ºC and pour butter and oil into an oven dish. Heat the baking dish in the oven. Dip the chicken in the beaten egg and dip in the crumb mixture. Put the chicken into the heated butter/oil mixture and bake for about 45 minutes until golden brown. Pour over some of the pan juices while baking. Serve with steamed vegetables and baked potatoes. Serves 4.
