Cheesy potatoes

  • oil
  • coarse salt
  • cream or mayonnaise
  • butter
  • 1
    can tomato and onion mix
  • origanum
  • salt and black pepper
  • 300
    cheese, grated


Preheat the oven to 180 ºC (350 ºF). Coat the potatoes with oil and sprinkle with salt. Bake for about 1 hour or until soft, or boil the potatoes in a little water until soft. Cut each potato in half and arrange in a layer in a prepared dish. Place a dollop of cream or mayonnaise on each half, working it into the potato with a fork. Dot with knobs of butter and spoon the tomato and onion mix on top. Season with origanum and salt and pepper to taste. Sprinkle with cheese and place under the grill until the cheese has melted. Serves 6.
