Cheese tartlets

    prepared shortcrust pastry

    onions, finely chopped

    red onion, finely chopped

    creamed cottage cheese
  • 80
  • salt and freshly ground black pepper

    grated Parmesan cheese
  • 60
    finely chopped chives
  • extra whole chives


Preheat the oven to 190 ºC and grease 6 small quiche tins with butter or non-stick spray. Roll out the pastry thinly and line the tins. Chill while preparing the filling. Lightly sauté the onions in the butter until tender but not brown. Beat the eggs, cottage cheese and milk together. Season well with salt and pepper. Stir in the onions, grated Parmesan cheese and chopped chives. Carefully pour the egg mixture into the pastry cases. Arrange a few whole chives in a star pattern on top if desired and bake for 20 minutes or until the filling is golden brown and set. Serve hot or at room temperature with a green salad for a delicious light lunch.
