Barbecue ribs

    Olive oil
  • ½ onion, chopped

    garlic cloves, minced

    green chilli, minced

    tomato sauce
  • 250

    dark brown sugar

    apple cider vinegar
  • 125
    ml
    apple juice
  • 125
    ml
    honey
  • 15
    ml
    Worcestershire sauce
  • salt and black pepper
  • 2
    ml
    chilli flakes
  • 1.5
    kg
    pork ribs
 

Method

3 hours 10 min
 

Preheat the oven to 180 °C .

1. In a large saucepan, heat the oil over a medium-high heat and sauté the onion, garlic and chilli until soft. Stir in the tomato sauce, sugar, vinegar,      apple juice, honey, Worcestershire sauce, salt, pepper and chilli flakes

2. Bring to the boil, stirring occasionally. Reduce the heat to low and simmer, stirring occasionally, for 10 minutes.

3. Put the ribs on a baking sheet, cover with foil and roast in the oven for 2 hours. Remove the foil and baste the ribs with the sauce. Return to the        oven and cook for 1 hour, basting again every 15 minutes. Remove from the oven and serve.

Tips

Instead of roasting the ribs you can boil them in a pot. Cover with water and boil for 45 minutes. Remove from the water and grill in the oven forabout 30 minutes.
