    lemon rind, grated

    ml
    lemon rind
  • 5
    ml
    mixed spice
  • 50

    walnuts, chopped
 

Method

 
Preheat the oven to 190 ºC (375 ºF). Spray a 20 cm cake tin with non-stick spray. Cream the butter and sugar together until light and creamy. Beat the eggs, milk and lemon rind together. Sift the dry ingredients together and add to the butter mixture, alternating with the egg mixture. Blend well after each addition. Spoon into the prepared tin. Blend all the ingredients for the topping and sprinkle on top of the batter. Bake for 40 minutes or until a testing skewer comes out clean when inserted into the centre of the cake. Serve with pouring cream.
