Wholewheat bread with creole char-grilled chicken

    chicken breast fillet
  • salt and pepper
  • Creole spice
  • 2
    slices wholewheat bread
  • shredded lettuce leaves
  • mayonnaise
  • few slices tomato
  • CREOLE SPICE
  • 5

    cayenne pepper
  • 5
    ml
    white pepper
  • 5
    ml
    black pepper
  • 5
    ml
    dried thyme
  • 5
    ml
    dried origanum
  • 5
    ml
    brown sugar
  • 15
    ml
    paprika
  • 15
    ml
    crushed garlic
 

Method

 
Place the chicken fillet between two layers of plastic wrap and flatten with the palm of your hand or with a meat mallet until about 2 mm thick. Season lightly with salt, pepper and spice generously on both sides with the spice mixture. Heat a ridged cast-iron pan until very hot, add 15 ml oil and heat until smoking. Grill the chicken fillet for about one minute on each side until charred. Meanwhile, place two slices of bread on a plate. Moisten the lettuce with mayonnaise, place on top of the bread and top with a few tomato slices. Place the chicken fillet on top and serve immediately.
