Whole chicken with potato

    tomato sauce

    honey

    wholegrain mustard

    Worcestershire sauce

    whole chicken
  • 6
    potatoes, peeled and sliced
  • 1
    large onion, sliced into rings
  • 60
    ml
    oil
 

Method

1 hour
 
Preheat the oven to 180 ºC (350 ºF). Spray a roasting tin with non-stick spray. Blend the tomato sauce, honey, mustard and Worcestershire sauce. Season the chicken inside and out with salt and pepper. Brush with the sauce and place in the roasting tin. Surround with the potato and onion slices and drizzle with oil. Cover with aluminium foil and bake for 1 hour. Remove the aluminium foil and bake for another 30 minutes or until the chicken is done and the potatoes are tender. Serve with vegetables or a salad. Serves 4.
