Whole chicken with nut filling

    olive oil

    spring onion, chopped
  • 1
    stalk celery, chopped
  • 2

    curry powder
  • 50

    walnuts, chopped
  • 50

    dried apricots, chopped
  • 45

    fresh white breadcrumbs
  • 15
    ml
    chopped parsley
  • 5
    ml
    grated lemon rind
  • 1
    lemon, juice
  • 1
    whole chicken
  • salt and pepper
  • oil for brushing
 

Method

 
Heat the oil in a pan and sauté; the spring onion and celery until soft. Add the curry powder and stiré;fry for another two minutes. Remove from the heat and add the remaining filling ingredients. Season the chicken inside and out with salt and pepper and fill the cavity with the filling. Brush the chicken with oil and place in a preheated 180 ºC oven. Roast for about one hour or until the chicken is done.
