Toasted health muffins

    sesame seeds

    sunflower seeds

    butter, melted

    honey

    large eggs, lightly beaten

    ml
    milk
  • 300
    ml
    self-raising flour
  • 75
    ml
    wholewheat flour
  • 125
    ml
    soft brown sugar
  • 100
    ml
    raisins
 

Method

20-25 minutes
 
1. Toast the coconut, oats, sesame seeds and sunflower seeds in a large frying pan over moderate heat. 2. Mix together the melted butter, honey, eggs and milk. 3. Sift together the flours and mix with the toasted ingredients, brown sugar and raisins. 4. Make a well in the centre of the dry ingredients and pour in the liquid, combining until just mixed. 5. Spoon into a greased muffin tray and bake at 180 ºC for 20 to 25 minutes. VARIATION Add 10 ml grated orange rind or 50 ml raisins to the dry ingredients for a fruity flavour.
