Three-in-one bean soup

    bacon, cut into pieces

    onions, finely chopped
  • 2
    cloves garlic, crushed
  • 3
    courgettes, rinsed and sliced into rings
  • 2
    carrots, scraped clean and sliced into rings
  • 4
    large, ripe tomatoes, skinned and finely chopped
  • 500
    ml
    chicken stock
  • 2
    ml
    dried basil
  • 2
    ml
    dried thyme
  • 410
    g
    beans in tomato sauce
  • 410
    g
    green beans, drained if desired
  • 410
    g
    butter beans
 

Method

 
Fry the bacon in a large saucepan until done. Add the onions, garlic, courgettes and carrots and sauté until glossy. Add the tomatoes and simmer until juicy. Add the remaining ingredients and simmer until a flavoursome soup is formed. Serve with fresh bread. Serves 4-6.
