The best scrambled eggs

Serving Change
  • A pack of streaky bacon
  • 5
    canola or vegetable oil
  • 8
  • A little splash of water
  • A good grinding of black pepper
  • A good sprinkle of salt

Fry the bacon in a pan and remove, reserve all pan juices.
Whisk the eggs in a bowl with the water and the salt and pepper, whisk well to add a bit of air to the mixture.
Place in the pan with the bacon fat and on a LOW heat, cook the eggs whilst stirring with a wooden spoon. DON'T stir too much or you will get a curdled consistency.
Take the eggs off the heat when they are still creamy and not fully cooked and place on top of hot buttered toast.
By the time you eat the they will be just cooked.
