    cold water
  • 500
    ml
    mealie meal
  • 5
    ml
    salt
  • 150
    ml
    boiling water
  • 1
    onion, sliced
  • 30
    ml
    margarine
  • 500
    ml
    whole sweet corn kernels
  • 200
    g
    Cheddar cheese, grated
  • 50
    ml
    cream of mushroom soup powder, blended with 200 ml water
  • 6
    eggs, beaten
  • 5
    ml
    basil
 

Method

+/- 1 hr
 
Preheat the oven to 180 ºC (350 ºF). Grease a large, flat ovenproof dish with margarine. Mix the cold water, mealie meal and salt together and add to the boiling water in a saucepan. Blend till smooth and cook till done. Sauté the onion in the margarine till soft. Add the mealie meal porridge mixture. Stir in the whole kernel sweetcorn, Cheddar cheese and mushroom soup powder. Cool. Add the eggs and basil and mix well. Spoon into the prepared dish and bake for about 1 hour or till firm. Cool slightly and serve. Serves 6-8.
