Sweet 'n sour chicken wings

    freshly ground black pepper

    clove garlic, crushed

    finely grated fresh ginger
  • 45

    finely grated orange rind
  • 4
    chives, chopped
  • 1
    red chilli, chopped

    honey
  • 30
    ml
    soy sauce
  • 200
    ml
    olive oil
  • salt and freshly ground black pepper
  • 1
    kg
    chicken wings
  • 15
    ml
    parsley, chopped
  • 15
    ml
    spring onions, chopped
  • strips orange rind
 

Method

 
Process the black pepper, garlic, ginger, orange rind, chives and chilli in a food processor to form smooth paste. Spoon into a mixing bowl and stir in the honey, soy sauce and oil. Season to taste with salt and freshly ground black pepper. Transfer the paste to a non-metallic dish and chill for at least 4 hours or overnight. Cover the chicken wings with the paste and grill in a griddle pan until golden brown and done. Scatter the parsley, spring onions and orange rind on top just before serving. Serves 4-6.
