Sweet dumplings in almond milk

    butter
  • 50
    ml
    apricot jam
  • 12
    ml
    bicarbonate of soda
  • 500
    ml
    cake flour
  • 3
    ml
    salt
  • 1
    large egg, beaten
  • 75
    ml
    milk
  • Sauce
  • 750
    ml
    milk
  • 250
    ml
    granulated sugar
  • 5
    ml
    almond essence
  • 30
    g
    butter
 

Method

 
Melt butter, stir in jam and bicarbonate of soda.
Fold in sifted dry ingredients alternately with the egg and enough milk to form a stiffish dough.
Mix sauce ingredients and bring to the boil.
Pour into a large ovenproof dish.
Spoon spoonfuls of the dough into the milk mixture.
The dumplings should be in a single layer.
Cover the dish with a lid or foil.
Bake at 190ºC for about 30 minutes.
