Strawberry and basil sorbet

  • 400
    fresh strawberries - stalks removed, rinsed and chopped
  • Zest and juice of 1 small lemon
  • 1-2
    honey - to taste
  • 1
    chopped fresh basil


Place the strawberries in the freezer until well frozen, minimum 3 hours.

Alternatively buy a bag of frozen strawberries or mixed berries.

Remove the frozen berries, place in your smoothie maker along with the lemon juice, honey, basil and 1-2 Tbsp ice cold water.

Blitz until you have smooth sorbet consistency, adjust to taste and then eat immediately or return the mixture to the freezer for 20 minutes or so to firm up a little more if you prefer.
