Sticky lime pudding

    ml
    butter
  • 250
    ml
    sugar
  • 60
    ml
    cake flour, sifted
  • 4
    limes, juice and grated rind
  • 500
    ml
    milk
  • 4
    eggs, separated
 

Method

 
Preheat oven to 180 °C and grease a medium-sized ovenproof dish.
Whisk the butter and sugar together.
Add the flour, lime juice and rind, milk and egg yolks.
Whisk the egg whites until stiff and fold into the mixture.
Turn the batter into the prepared dish and bake for 30 to 50 minutes or until the top is golden brown.
