Samp risotto

    oil
  • 1
    onion, chopped
  • 1
    stick celery, chopped
  • 1
    green or red pepper (or combination), chopped
  • 50
    g
    fresh mushrooms, sliced
  • 75
    ml
    raisins (optional)
  • 300
    g
    corned beef, diced
  • salt and cayenne pepper to taste
  • 500
    ml
    cooked samp
 

Method

 
Heat oil and sauté onion, garlic, celery, green pepper and mushrooms until soft. Add raisins, cooked samp and seasoning. Simmer for 5 minutes. Gently fold in corned beef and heat though for 10 minutes to combine flavours. Serve warm with a salad.
