Heat the oil in a pan and fry the onion and garlic until soft.
Add the sugar, curry powder, soy sauce, vinegar and wine and stir.
Add the coconut cream, reduce the heat and simmer for about five minutes.
Cool until needed.Roast butternut
Place the butternut in an ovenproof dish.
Drizzle with the oil and season with sea salt.
Oven-roast and 180 °C for 40 minutes or until done and the edges are crisp.
Transfer to serving plates.
Pour the sauce over the butternut, sprinkle with the feta cheese and season with black pepper.
To make your own curry powder
Toast 2 small dried red chillies, 30 ml coriander seeds, 15 ml cumin seeds, 2 ml black mustard seeds and 5 ml black pepper in a dry pan. Add 2 ml each ground ginger and turmeric and process to make a fine powder.
