Potato and haddock soup

    potatoes, peeled and chopped
  • 25
    ml
    butter
  • onion, finely chopped
  • 800
    g
    haddock, skinned
  • 500
    ml
    fish or chicken stock
  • 580
    ml
    milk
  • 150
    ml
    cream
  • 15
    ml
    fresh chives
 

Method

 
Boil the potatoes in salted water until tender. Drain well and mash. Melt the butter in a large saucepan and sauté; the onion until tender. Add the haddock, stock and milk and simmer until the fish is done. Drain and process the fish in a food processor until smooth. Return to the drained milk mixture in the saucepan, add the mashed potato, cream and chives. Bring to the boil while stirring and season with salt and pepper if necessary. Serve with fresh bread.
