  • 1
    cooked sheep's tripe and trotters, bones removed
  • 1
    large onion
  • 5
    ml
    ground cloves
  • 5
    ml
    ground nutmeg
  • 5
    ml
    black pepper
  • 70
    ml
    brown vinegar
  • 7
    ml
    ground coriander
  • 240
    g
    cake flour
  • 4
    eggs, beaten
  • salt
  • butter for frying
 

Method

 
Mince the tripe and trotters with the onion. Add the remaining ingredients, mixing well. Season with extra salt if necessary. Press a 5 cm thick layer into a greased dish. Cool completely. Cut into slices and fry in hot butter until brown on both sides. (Fry one side well before turning.) Serve with mashed potatoes or homemade bread.
