    large onion, finely chopped
  • 125
    ml
    fresh origanum leaves
  • olive oil
  • 500
    ml
    peeled diced aubergine
  • 500
    ml
    fresh mushrooms, sliced
  • 250
    ml
    green pepper, finely chopped
  • 125
    ml
    celery, thinly sliced
  • 500
    ml
    cabbage, finely sliced
  • sea salt
  • black pepper
  • 1
    juice of a lemon
 

Method

 
Brown the onion and the origanum in a little olive oil. Soak brinjal in salt water for 10 minutes and then drain. Add the brinjal and brown lightly, then add the mushrooms. Add all the other ingredients and lastly the lemon juice. Stir lightly until tender, and serve piping hot with brown rice or crusty brown bread and a sprinkling of finely chopped parsley mixed with a little origanum.
