Oriental pasta salad

    spaghetti or thin ribbon noodles

    sesame or sunflower oil
  • 15

    soy sauce
  • freshly ground black pepper

    cucumber, cut into short strips
  • 2
    carrots, scraped and cut into strips
  • 6
    baby sweetcorn, sliced
  • 2
    spring onions, sliced into rings
  • SALAD DRESSING
  • 300
    ml
    water
  • 1
    clove garlic, crushed
  • 15
    ml
    soy sauce
  • 7
    ml
    chilli sauce
  • 60
    ml
    crunchy peanut butter
  • 5
    ml
    ground cumin (jeera)
  • 5
    ml
    ground coriander
  • 15
    ml
    lemon juice or white wine vinegar
  • 2
    ml
    sugar
 

Method

 
Break the spaghetti in three and cook until done. Drain and transfer to a large mixing bowl. Add the oil and soy sauce and season with black pepper. Add the rest of the salad ingredients and cool. Place all the ingredients for the salad dressing in a fairly small saucepan. Bring to the boil just before serving, simmer for a few minutes until the sauce thickens slightly and becomes creamy and immediately pour over the pasta and vegetables. Mix and serve immediately. Serves 4-6.
