Nectarine shortbread

    butter, softened
  • 75
    g
    castor sugar
  • 175
    g
    plain flour
  • 75
    g
    semolina
  • 125
    g
    dried nectarines, chopped
  • 12
    cloves
  • extra castor sugar for sprinkling
 

Method

 
Preheat oven to 160 ºC. Beat butter and castor sugar well. Mix in sifted flour, semolina and nectarines. Roll out mixture gently on a floured surface to 5 mm thick. Cut 12 shapes with a cookie cutter. Place on a greased baking tray. Prick all over with a fork and place clove in the centre of each. Bake for 20 minutes, or until pale golden and firm in centre. When cool, sprinkle with extra castor sugar and store in an airtight container. Makes 12.
