Mushroom sauce for hamburgers

    butter
  • 200
    g
    fresh button mushrooms, sliced
  • 170
    g
    Nestlé Ideal Evaporated Milk
  • 375
    ml
    boiling water
  • 58
    g
    mushroom soup powder
  • 30
    ml
    sherry
  • salt and freshly ground black pepper
 

Method

 
Heat the butter in a pan and sauté the mushrooms until pale brown. Add the evaporated milk and reduce the heat. Simmer for a few minutes until the milk has reduced slightly. Add the boiling water and sprinkle with the mushroom soup powder. Stir with a wire beater until well blended and all the lumps have disappeared. Add the sherry and season to taste with salt and freshly ground black pepper. Simmer until the sauce comes to the boil and thickens, stirring every now and then. Serve hot. Makes about 600 ml sauce.
