Mealie meal vetkoek

    ml
    mealie meal
  • 500
    ml
    water
  • 5
    ml
    salt
  • 2
    extra-large eggs, whisked
  • 60
    ml
    cornflour
  • 5
    ml
    baking powder
  • pinch salt
  • 420
    g
    cream-style sweetcorn
  • oil for frying
 

Method

 
Blend the mealie meal with a little water until smooth. Bring the remaining water and salt to the boil. Add the mealie meal and mix well. Bring to the boil while stirring continuously and simmer for about 10-15 minutes until cooked. Cool slightly. Add the whisked egg to the stiff porridge and mix well. Sift in the cornflour, baking powder and salt. Add the sweetcorn and mix well. Drop spoonfuls of the batter into enough preheated oil for deep-fat frying. Fry until done on the inside and golden brown on the outside. Drain on paper towelling. Serve as is or with margarine and honey for a delicious snack, or serve as a side dish. Makes 25 vetkoek.
