    vinegar

    extra-large egg yolks

    ml
    vinegar
  • 2
    ml
    mustard powder
  • 5
    ml
    crushed garlic
  • 5
    ml
    salt
  • milled pepper to taste
  • 250
    ml
    olive or sunflower oil
  • 30
    ml
    lemon juice
 

Method

 
Blend egg yolks, vinegar, mustard powder, crushed garlic, salt and pepper. Add oil, drop by drop and beat constantly, until 60 ml (4 tbsp) has been used. Add remainder in a steady stream, beating constantly. When thickened, check seasoning and add more salt and pepper if necessary. Add lemon juice and vinegar just before using.
