Honey and pecan nut cookies

    butter

    g
    soft brown sugar

    large eggs
  • 300

    self-raising flour
  • 15
    ml
    baking powder
  • 225
    g
    pecan nuts, roughly chopped
  • 125
    g
    sultanas
  • 30
    ml
    honey
 

Method

10-15 min
 
Cream together butter and sugar until light. Gradually beat in eggs, making sure they're thoroughly combined. Fold in flour, baking powder, pecans (reserve some for decoration), sultanas and honey. Grease two baking sheets. Roll mixture into 18 balls and place on baking sheets. Flatten with a dampened palette knife and top each with a couple of pecan nuts. Bake in preheated oven for 10-15 minutes. Cool and store in an airtight tin for up to three days. Makes: 18 Oven temperature: 190 ºC
